THREE-INGREDIENT RECIPE: Healthy Oatmeal Banana Pancakes

2 Bananas Directions
1/2 Cup Quick Oats These easy gluten free pancakes are my "go-to" for a healthy
2 Egg breakfast that fills me up without that heavy feeling!
Pinch of Salt In a bowl, smash your two bananas with a fork.
Optional: Dash of Vanilla, Cinnamon, Orange Zest, Add the two eggs, oats and salt. Add cinnamon, vanilla if
desired.
Blueberries or other tasty additions.
Add any additional ingredients, such as bananas, blueberries,
strawberries, to your mix.
Heat your pan on MEDIUM HIGH HEAT. When your pan is
hot, spray with Coconut Oil, Butter or any Non-Stick Spray.
Using a measing cup, place a 1/4 cup of the batter onto your
skillet or pan. IMPORTANT - you may need to flatten out the
pancake as the batter is thick.
Cook for approximately 3 minutes or until the pancake is lightly
browned. Flip over and cook for about 2 minutes. (These are
thick pancakes so make sure that they are cooked through)
Serve immediately with fruit, maple syrup or your choice of
topping.

HEALTHY COOKIES: CHICKPEA CHOCOLATE CHIP COOKIES

1 15oz can chickpeas, rinsed and drained These chickpea chocolate chip cookies are soft and fluffy with
just the right amount of sweetness. No one will ever guess these
½ cup smooth almond butter or cashew butter, unsalted cookies are made with garbanzo beans instead of flour!
⅓ cup maple syrup
Preheat the oven to 350 degrees.
2 teaspoons vanilla Add the chickpeas and nut butter into a food processor and blend
½ teaspoon baking soda on high for 1 minute.
½ teaspoon baking powder Add the maple syrup and vanilla and continue to blend for 2-3
½ teaspoon salt minutes, scraping down the sides every minute. You want the
mixture to be entirely free of any lumps.
½ cup dark chocolate chips
Add the baking soda, baking powder, and salt, then blend for 30
seconds.
Test the temperature of the batter and if necessary, let cool before
adding the chocolate chips. When blending for a long time, the
mixture can get warm and cause the chocolate to melt slightly.
Once cooled, stir in the chocolate chips.
Drop rounded tablespoons of cookie dough onto a baking sheet.
The cookies will spread just slightly so be sure you leave a few
inches of space between cookies.
Bake for 12-14 minutes until the cookies have browned on the
edges.
